This is a subjective summary of references that I found useful. It is not meant to be comprehensive. It reflects my own prejudices as to what I've found useful.

Aerodynamics

• Race Car Aerodynamics: Designing for Speed (Engineering and Performance) by Joseph Katz (Bentley 1995) is a very understandable introduction to vehicle aerodynamics that covers open-wheel and stock cars.

Vehicle Dynamics

• Race Car Vehicle Dynamics by William F. Milliken and Douglas L. Milliken (SAE International 1995) is the classic text for vehicle dynamics. It was written for engineers and requires pretty strong mathematics and mechanics knowledge to get through.
• Equations of Motion: Adventure, Risk and Innovation by William F. Milliken (Bentley 2006) is the autobiography of the founder of modern racing vehicle dynamics.

Tires

• The Racing & High-Performance Tire: Using the Tires to Tune for Grip and Balance by Paul Haney. If you buy only one book about tires, this is the one. It has some of the best information, explained in a clear and straightforward manner. Haney has gotten a lot of inside information that really sheds light on the role the tires play. He also touches briefly on topics like load transfer.
